The Kershaw Fillet Knife with 7-inch blade (Kershaw 7 in. Fillet) is the ideal knife
for filleting medium to large fish. The blade is made of 420J2 Japanese stainless steel and has just the right amount of
flexibility for easy filleting. The softer nature of this steel allows the
blade to bend without breaking and effortlessly glide through fish to make the perfect fillet. In addition, the
steel used here is very resistant to corrosion, and this is especially important when you are in one of the water.
