This 12" (30.5 cm) long fillet knife with a slightly curved blade ( 12-inch curved fillet ) is an
ideal knife for opening and filleting larger fish and game. It is
ideal for most saltwater and large freshwater fish, as well as various game species, and makes it incredibly easy to
break down fish and game into manageable pieces. Thanks to the considerable length and slight curvature of the blade, clean
cuts can be made with pulling motions that extend all the way. And this more generously designed knife is not only an excellent
instrument for processing freshly caught fish or game you've shot yourself—many professional chefs also use it to
process meat in their own restaurant kitchens.
The sharp blade is made of 420J2 stainless steel, a very tough steel that is highly resistant to
corrosion (a particularly important criterion for use in damp or wet environments) and
can be sharpened without any problems. In addition, this steel has just the right amount of flexibility to facilitate filleting
, thus protecting the tender meat and preserving its fine flavor.
The handle, made of durable glass-fiber reinforced nylon, is encapsulated with rubber and its surface features Kershaw's unique
K-Texture ™. This structure (a repeating pattern of the letter K, as seen in the Kershaw
company logo) provides the necessary grip and a secure hold at all times, even if your hands are slippery.
A blade guard is included in the scope of delivery for proper storage of this fillet knife with K-Texture™.
